How to Make Vegan Chicken Noodle Soup

Easy Vegan Chicken Ramen Soup

This simple “chicken” noodle soup is made with a cup of Right Foods vegan chicken ramen, topped with a little red cabbage, cilantro and chili flakes for some added crunch. 

If you like your soup more brothy, simply add a little more water- or add less if you like a thicker soup. Either way, this vegan alternative will satisfy your craving for a warm bowl of chicken noodle soup like no other.  

Vegan Sesame Chicken Noodles

As easy as it is delicious, this comforting bowl of noodle soup is sure to delight any soup-lover’s palette. 

For this recipe, our team used a cup of vegan noodle soup and added tofu + bean sprouts instead of using chicken. With vegan soup options this tasty, who even misses the meat? 

Vegan “Chicken” Soup

Coming at you live from the kitchen of Dana from @therootsofnutrition: “This bowl is just hot water added to @rightfoods vegan ‘chicken’ ramen, and I added in fresh arugula, garbanzo beans, avocado, cilantro and red chili flakes.”

We love how the tofu and avocado adds a little extra texture, without using any animal products. Next time you’re making a cup of instant chicken noodle soup, we suggest that you try adding different vegetables to play around with alternative textures. The Best Substitutes for Chicken(less) Noodle Soup 

Vegan noodle soup is wonderful on its own, but if you are hankering for that “meaty” texture, here are a few meatless options to scratch that itch: 

Tofu

Tofu is one of the best substitutes for meat available, and not only that, but tofu is tasty even if your expectation isn’t to replace meat. 

Like many animal products, tofu tends to take on the flavor of the dishes that it’s added to, so it’s a natural fit for a bowl of noodle soup or… anything really. This soy-based substitute can be fried, baked, microwaved or even eat raw, and experimenting with different prep styles is a fun project for many foodies. 

Next time you’re making a bowl of chickenless noodle soup, try adding cubed tofu and see if anyone notices a difference. (We bet they won’t.)

Beans Sprouts

We know this is unexpected, but hear us out! The distinct texture and subtle, nutty taste of bean sprouts makes them an excellent candidate for a bowl of vegan soup. They’re inexpensive and filling, and have been used in vegan dishes for centuries. Treat yourself to a handful of these powerful little sprouts next time you’re making a cup of vegan noodles. 

Eggplant

Cubed eggplant offers an earthy, “meaty” texture, without using any animal-products. An incredibly versatile ingredient, this vegetable can be prepared in so many different ways. Consider adding eggplant cubes as a meat replacement for your next batch of noodle soup.

Chickpeas

Whether or not you are vegan, we think that you will love the taste of chickpeas in your bowl of soup. Foodies have always loved chickpeas alone, and they make fantastic additions to almost any vegan meal. Plus, doesn’t “chickpea chickenless noodle soup” have a fun, plant-based ring to it?

Seitan

This gluten-based substance is hailed as potentially the closest meat-substitute available. It mimics the look and even the feel of meat surprisingly well, and can even imitate the flavor of chicken when it’s added to certain foods, like soups and chilis.

Removing chicken from a recipe doesn’t even remotely mean that you have to compromise on the taste or texture. There’s a whole new world of possibilities when you veer off the traditional chicken noodle soup path, and start exploring the endless vegan options.
