Rainbow Vegan Pad Thai by Plantifullybased

Pad Thai is one of our favorite takeout dishes. Using our vegan and gluten-free Pad Thai cup, Francesca Bonadonna of Plantifully Based created this nourishing vegan Pad Thai packed to the brim with veggies and tasty Thai flavors.

Rainbow Vegan Pad Thai by Plantifullybased

Prepare the Pad Thai according to package instructions. Saute the peppers, red cabbage, carrots and edamame until slightly softened but still a little crunchy.

Add the noodles and chopped green onions to the pan. Combine everything together and top with more green onion, peanuts, sesame seeds, cilantro, and a hearty squeeze of lime.
