Crispy Black Bean Tacos Recipe
These crispy black bean tacos are wholesome, comforting, and easy to make! The black bean
filling is made from Right Foods Organic Lower Sodium Black Bean Soup. Paired with a spicy,
tangy, vegan yogurt dipping sauce, perfect for a weeknight dinner.
2 teaspoons taco seasoning
5 mini whole wheat tortillas
1/3 cup vegan yogurt
1 teaspoon taco seasoning
½ lime, juiced
Salt to taste
Vegan Yogurt Sauce
Preheat oven to 400°F.
Meanwhile, pour the black bean soup into a pan. Add the taco seasoning and mix. Cook over medium high heat, enough to get it to boil, for about 10 to 15 minutes until most of the liquid is cooked off. Stirring occasionally.
Once the liquid is gone, use a spatula to mash the beans down.
Scoop about 2 tablespoons onto half of the tortilla and then fold over.
Once they are all completed bake in the oven for 15 minutes. Then flip and bake for another 3 minutes.
While they bake make the dipping sauce by combining all the ingredients.
Once the tacos are done, plate, garnish if desired, and enjoy with vegan yogurt sauce.
