How Coconut Milk Can Make Your Ramen Taste Better
Ramen is a Japanese dish consisting of noodles in broth, often flavored with miso or soy sauce. There are so many variations and riffs on this popular dish, from different toppings to broth flavorings to seasonings and garnishes.
Today, we’re talking ramen broth; specifically, why coconut milk is so amazing in ramen. Ramen broth is super savory and salty. Coconut milk is creamy and a touch sweet. Together, ramen and coconut milk marry beautifully. Dr. McDougall, MD recommends keeping your intake of plant-based fats to about ¼ cup or 1 ounce per day. Adding them sparingly to your nourishing plant-based meals is totally optional, but can be a great way to boost flavor!
So, how do you go about making coconut milk ramen? First, let’s start with the ramen. You could make it from scratch, but that would take hours. Instead, let’s take a shortcut and use a cup of instant ramen that tastes almost as good as a ramen bar.

Thai Green Curry Ramen
This ramen is made super creamy by blended cauliflower and coconut milk in the curry broth. Thai green curry paste and the flavor packets from Right Foods vegan chicken ramen add the zesty flavor of curry ramen.
To pair with the curry noodles, we added golden brown tofu cubes, edamame, spinach, and green onions. A twist of lime and a splash of maple syrup tie all the flavors together.
Let’s start with the creamy coconut milk broth. Boil your cauliflower until tender, then blend with the ramen seasoning packet, coconut milk, curry paste, and water. Blend until smooth.
Pour this broth into a pot with ramen noodles and edamame. While the noodles are cooking, cook cubes of tofu in a pan until golden brown.
Add lime juice and maple syrup into the broth. Taste and add salt if needed. In the last couple minutes of cooking, add in spinach. Garnish with green onions and sesame seeds and enjoy!
