Who wants an enchilada?! These spicy black bean enchiladas from Francesca are sure to warm you up! Made using our black bean and lime soup, they are ready in less than a half hour, packed with plant protein and are healthy yet incredibly satisfying.

Our vegan Black Bean and Lime Soup Cup is so versatile and perfect for Mexican-inspired dishes like this one. Savory black beans meet smoky fire roasted tomatoes and spicy jalapeño.
Simply prepare the black bean filling and red sauce, then assemble the enchiladas by laying red sauce, tortilla, black bean mixture, and rolling them up. Top with more red sauce and bake until crispy.
Garnish with jalapeño, limes, cilantro, and any leftover red sauce.
