Sweet potatoes and kale are super nutritious foods, so this meal will reenergize you after a long day. Noodle dishes are one of the easiest meals to make, and this one is made even easier by Right Foods vegan chicken ramen, which takes only minutes to prepare with hot water.
Kale, sweet potatoes, and garlic are coated in red chili flakes, salt, pepper, and lemon juice before baking in an oven or air fryer for 10 minutes. While the veggies are baking, prepare your vegan ramen cup.

Packed full of a beautiful rainbow of vegetables, this Pad Thai is flavorful, healthy, and easy. Most of the work you have to do for this recipe is chopping vegetables. Once the veggies are prepped, saute for just a few minutes, or keep them raw if you’d prefer.
Prepare the Pad Thai cup and add to the pan with chopped green onion and a squeeze of lime. Garnish with peanuts, sesame seeds, and cilantro.
This recipe may look daunting because of its long list of ingredients, but it’s really just chopping vegetables and adding everything to a pot to cook. Plus, you can make a big batch of this and enjoy the leftovers for a few days.
