How to Make Low Sodium Tomato Soup

Heat a medium-large pot over medium heat. Cook chopped onion until golden brown, about 5 minutes. Add in the minced garlic and cook for another minute or so. 

Add the can of tomatoes, oregano, basil, and apple cider vinegar, and bring to a boil. Add the can of coconut milk and let it come back to a boil.

Once all the ingredients have boiled together for a few minutes, puree the soup to your desired texture using an immersion blender (or regular blender if you don’t have one). We like ours as smooth as possible, but whether you like your soup chunky or smooth, you do you.
