Spicy Vegan Stuffed Avocados

Avocados are life, and these just made ours a whole lot better! We stuffed ours with some thickened black bean & rice soup and mixed in bell pepper, red onion, garlic, cucumber and jalapeños for a kick. Top with cilantro and some lemon zest and you've got a packed snack.

Spicy Vegan Stuffed Avocados

Start by preparing a Right Foods Black Bean and Rice Soup cup according to package instructions. Combine diced garlic, bell pepper, jalapeño, cucumber, and red onion, plus tahini and soup.

Slice the avocado in half, remove the pit, and stuff with the filling. Top with salt, pepper, cilantro and squeeze of lemon.

If you don't have a black bean & rice cup, feel free to substitute with a Black Bean & Lime cup.
